Vegetarianism is as old as humanity. For example, history records vegetarians in ancient India, Rome, and Greece. In the USA, Christians, acting according to the Bible (Book of Genesis), and in accordance with human anatomy designed for plant-eating, established the vegetarian movement during the early 19th C. The veggie-pioneers were for freedom/human rights, natural health ( exercising, relaxing, drinking of pure water, eating whole foods, and avoiding drugs, alcohol, and tobacco) stewardship of the land, and animal liberation. Karen's Cooking: A Vegetarian View copyright 2007 Guidance for new vegetarians, vegans, and people who want to ‘go veg’ People often ask, upon learning I am a vegetarian, if eat bread and pasta. Initially, this question perplexed me. Did the askers think bread or pasta were types of animal flesh? Soon I figured out people ask a vegetarian if she eats bread and pasta because they erroneously equate vegetarianism with dieting, and specifically the anti-carbohydrate diet hype saturating Big Media a few years ago. Bread and pasta are staple foods. If they contain eggs or animal milk, bread and pasta aren’t vegan, but they are vegetarian. Vegetarians are not dieting, rather vegetarianism is a philosophy and a practice as old as humanity. Health benefits of a plant-based diet are a reward, and not usually the main reason for abstaining from meat, although there are exceptions such as in the case of natural hygienists. However, if one is not motivated by religion or ethical beliefs return to meat-eating, even if only on occasion, is likely to occur. Recipe So, your favorite meat-based dish is potpie. Don’t give it up; instead, give to yourself, and create a wholesome potpie you will like more than the animal-derived variety. If you enjoy carrots, potatoes, corn, peas, celery, mushrooms, garlic, onions, and herbs in your potpie -- keep them in your recipe, and for the meat use tofu or seitan (wheat meat/gluten). Another possibility is garbanzo or pinto beans, or lentils. You might choose to make the stew without tofu, seitan, beans, or lentils. Either way, make a sauce, roux-like, from flour (whole grain preferred) and a liquid such as water, vegetable stock, juice from the beans or lentils, or vegan milk (rice, soy, oat, or almond). You could also use olive oil. May add arrowroot to thicken. Optional: add tamari or miso – making sure the label reads ‘no GMO’ -- for a ‘meaty’ type flavor (although, to me, these are flavorful but do NOT taste like meat).
